National Cocktail Day & the Menu Adoption Cycle

Cocktails & Menus.

Every year on March 24th we celebrate National Cocktail Day & today we pair our selections with the four stages of the Menu Adoption Cycle with some restaurant favorites across VE Restaurants in Miami & Las Vegas.

The first definition of cocktail appeared in a New York newspaper in May 1806: *”stimulating liquor, composed of spirits of any kind, sugar, water & bitters“*. The legends around the origin of the name range from the french word “coquetier” which refers to glass bowls that were used for both purposes in the late 1700’s, to cockfighting stories in which winning rooster owners took defeated tails and stir their drinks in sign of victory (cock’s tail). The truth is that the origin of the word remains unknown.

What is a Cocktail? In the words of Mixologist Danilo Bolzovic, in his must-read book The Art of Mixology, Bars & Cocktails, Barkeep, *”A well-made cocktail should offer a symphony of flavors and each sip should unveil a new aroma“*.

To celebrate, we are also looking at the Menu Adoption Cycle (MAC), defined as the framework to predict food trend, that we cherish & follow at VE Group, totally agreeing that trends start at restaurants. The MAC has been created by market research firm Datassential and it establishes four stages:

1) Inception – New & Not So common to find

At Oh! Mexico in Miami Beach, the menu includes five varieties of Cantaritos, all made with Mezcal including Flor de Mayo, Paloma, the Smokey Watermelon (pictured), Mezcal Negroni & Chachalaca.


2) Adoption – Slowly and nicely growing on menus.
News Cafe
This cocktail appears in 2.2% of the Menus in the US and has grown +39% in the last 4 years. At News Cafe is prepared with Old Forester 86, Campari, Martini Rossi Sweet Vermouth


3) Proliferation – Grown & Popular, chain restaurants & almost everywhere.







Moscow Mule is currently in 10.7% of menus, with a 12–month growth of minus 8% and minus 6% in the last 4 years.
Found at Barsecco, Cafe Americano, Mercato della Pescheria & also at Paperfish.


4) Ubiquity – Everywhere, All the Time.
Some good examples are: Mojito (pictured), Margarita, Rum & Coke, martini, daiquiri, pina colada.

Take Mojito, for example,  which is more common to find on regional chains like Havana 1957.
This cocktail is presently on more than 20% of menus & it has experienced a -3% growth in the last 12-months.

Havana 1957 Wins: Best Sandwiches of America

This seems to the year of Latin influences in the sandwich category restaurant menus, Latin connecting with innovation & creativity.

Without a doubt, Restaurant Hospitality’s Best Sandwiches annual competition is one of the most expected, where independent operators have the opportunity to submit their sandwich candidates. RH’s editors evaluate based on looks, description, uniqueness notes & ingredients. Editors spot the trends across the nation and select the winners in America, a slideshow that every chef gets to look at for one year when they need inspiration for their menus. 

One of the notable trends for 2022 is the Latino influences that mix Cuban with Mexican or Brazilian, like Havana 1957, Chef Yunior Perez, one of  the winners and editorial mentions of the year.

Chef Yunior, born and raised in Havana, Cuba where he went to culinary school, moved to Miami in 2015 & joined VE Restaurant Group with the Havana 1957 concept in 2018. Promoted to Sous Chef in only two months on the job, he is now the Executive Chef in South Beach, at the Hotel Breakwater location in Miami Beach. 


Chef Yunior’s mantra: Elige un trabajo que te guste y no tendras que trabajar ni un dia en tu vida” aka Get a job that you love so you dont have to work a single day in your life”.
When you love your work, it does not feel like working at all.

For the head turning El Guapo aka The handsome , Yunior’s inspiration are Latin America roots, flavors, culture & Cuban Sandwich, the famous sandwich with a wikipedia entry. I have to specially thank Chef Juan Luis Rosales, Concept Chef Havana 1957 & Corporate Chef Alex Medina for their support & expertise when creating El Guapo” – said Chef Perez.

The Cubano-style sandwich El Guapo, proud with flavors from Latin America, has roasted picanha beef, cream cheese chimichurri sauce, guacamole and roasted tomatoes pressed in Cuban bread topped with butter.

If you like Pina Colada

Travel + Leisure mapped the most popular cocktails by State & Country using a UK swimwear study that analyzed keyword searches via Google. According to the Cocktail Report by PourMoi company, piña coladas top the list (with 2.3 million) in Florida and Hawaii, though in other six states including Nevada they came out as the most popular. Where else? New Jersey, Virginia, Arizona, Utah, and Illinois.

The origins: First mentioned as a cocktail dating back to 1952, always associated with summer, beaches, vacation & tropical, Pina Colada is also (and back to the Pour Moi study) the number two searched in US but also in Mexico, Russia & Egypt (speaking about 10.5 million global searches).

Mix & Match, July 10th every year we celebrate National Day so let’s take a look at the great variety of pina coladas based on our guests preferences:


Traditional & Classy – Summer trends.In the Top 10 of favorite drinks for guests spending Un dia en la Habana, Pina Colada consumption during Q1-2022 was about 38 cocktails / day but since June 1st it the number has increased +8 every day.
Hey Bartender! The average number of this cocktail per day in Havana 1957 is 43.
Ingredients: House piña colada mix and Bacardí Superior Rum.



Popular & Iced. All year favorite.Between Miami Beach & Las Vegas, over 12K guests have enjoyed Pina Colada during 2022.

If someone ever needs a reason to eat more sushi: International Sushi Day is being celebrated on June 18. Though apparently, in Brickell Miami, sushi days are any /every day.

As of 2022 there are about 16K Sushi Restaurants in the US, according to consulting company IbisWorld with States like California, New York & Texas seeing the most number of sushi / Japanese cuisine locations.

Back in Miami & according to Travel Guide TripAdvisor, there are 233 Japanese, Japanese fusion & sushi restaurants from Homestead to Boca Raton.

Ranking #1 is PaperFish Sushi Bar, which is celebrating one year anniversary in Miami & a soon to open sister location on Espanola Way in the summer, so for international Sushi Day we decided to take a look at visitors’ preferences.

Looking into 53K restaurant visitors year to date, we combined two categories: top sellers & the most-ordered menu items. No, not necessarily the same list, though some obvious & delicious duplicates.

About 20 participant restaurants in Miami Beach, of which 11 part of Vida & Estilo Restaurant Group are celebrating Military Appreciation Month with FIVE specialty cocktails on the menu with veteran-owned Heroes Vodka during Memorial Day weekend festivities.

In Brickell, the absolute winner is Marabu at Brickell City Center where staff recommends the Passion Fruit Mojito as one of the bests in the area & that according to reviewers about staff “certainly did not lie”. Our Best Cinco de Mayo in South Beach

With CINCO around the corner, let’s take a quick look at the best Mexican restaurants in Miami Beach that will be celebrating the Batalla de Puebla, the Mexican army’s May 5, 1862 victory over France at the Battle of Puebla during the Franco-Mexican War.

First we looked into TripAdvisor Top 10 Mexicans & the reviewers recommendations, then selected Three from the list that will feature Mariachis starting at 6pm.

We also checked Google ratings & what food expert firm Datassential got to say about 50% of the people preferring Mexican food not cooked at home.

Lent Season is now here thru April 14 and the time to try and explore our seafood offerings, from innovations to one of our guests favorites.

According to industry expert Datassential Meat, Poultry & Seafood Keynote Report that circulated earlier this month: “…Seafood tends to show up in more traditional applications on menus, while beef and chicken are used in a wider range of unique dishes. More unique seafood dishes score well with younger consumers, in particular, while 60% of consumers overall say they’d eat more seafood if they had more recipe ideas..” 

Based on the 2022 Food Industry Trend report the top five most liked preparations for fish among US consumers: 63% Fried, 60% Grilled, 56% Parmesan Crusted,  54% Beer Battered & 47% Panko Crusted. The latest addition is the CEVICHE Carretillero with fresh cut Corvina, leche de tigre, rocoto pepper, crispy fried calamari, sweet potato, giant peruvian corn, crispy cancha corn.

Picoso & Rico, Spicy & delicious, the aguachiles aka Mexican style ceviche at La Cerveceria de Barrio are unlike any typical seafood appetizer. They do have serrano pepper that when added to the fresh citrus marinated Gulf shrimp with cucumber & red onion create an explosion of flavor & freshness. If spicy is too much for you, you can always ask for the lighter version that does not have any picante.

Dessert, Cocktails AND the secret rise of Dessert Cocktails.

Seeing dessert menus with coffees & after dinner drinks is something absolutely common for restaurants, particularly in fine dining but not limited. Sometimes, in absence of a  printed menu, the server orally introduces dessert to diners & back in days, though they may come back, there was a dessert cart for a tableside exhibit. 

What about dessert cocktails? Both, drinks and dessert are no doubt two of the hottest categories in the restaurant hospitality Industry that have crossed over in the last decade or so, inspiring and influencing each other and creating a new category altogether with dessert drinks.

Here is our selection for Dessert Cocktails across Vida & Estilo restaurants for Miami & Las Vegas.

1- Espresso Martini  @Cafe Americano, Miami Beach & Las Vegas.Needless to say  about the increased popularity, especially within the last few years, makes it a staple on our cocktail menu. And for an American fare with a Latin twist as Cafe Americano, sticking to the classics is something important.
Recipe Highlights: 2 oz Vodka, 1 espresso shot & half oz cacao cream.








2- White Godiva Martini @Barsecco, Brickell Sophistication can always come in a chocolate martini shape.
The Barsecco White Godiva is a true dessert libation with Vanilla Vodka, Cacao cream, Godiva white chocolate liquor & Cocoa powder. Sip & be amazed.
Recipe highlights: 1 oz Vanilla vodka & 2 oz white Godiva liqueur with a hint of cacao.








3- Tres Leches Latte @Cortadito Coffee House
This blend of the same parts of Whole & Evaporated & a quarter of Condensed milk with whipped cream, vanilla syrup and gusto beans has proven to be a perfect dessert cocktail on the go.
Latte sizes may vary between S, M & L. For a Small 3 Leches: Medium or Dark Roast Espresso at preference, 2 Oz of Whole & Evaporated with half condensed (or more if using dark roast).








4- Mi Media Sandia -@ La Cervecería de Barrio in Miami Beach
Lighter? Maybe un poquito. Certainly, not the typical dessert cocktail but melon lovers will find that the mix of Ilegal Joven, Fresh Lime Juice, Fresh Watermelon Juice, Jalapeno, Agave and Chile Tajin can become a pleasant option.
Recipe highlights: 2 oz Mezcal & 4 oz combined of watermelon & agave nectar, adding jalapeno & lime

Some days it feels like the year has passed so rapidly, it has been one year since we opened Cortadito Coffee House & just like that we started 2021 with a January witnessing a 4th Cafe Americano & an April blossoming with PaperFish sushi bar. 

Summer brought us great joy & for the first time a Key to the City of Miami Beach plus Hispanic Heritage month award for Oh Mexico, such a great way to begin the 25th anniversary celebration of Vida & Estilo in America.  

And now, here we are writing about the end of the year & more importantly what is it that our guests prefer in our restaurants in hectic post-pandemic times. Some items will be best sellers forever. It is hard to compete with 96 years old American Breakfast.
However, some others like Cuban Sandwich did not make it to the list just because we don’t have a best of the year sandwich, or perhaps because we dedicated a whole Cuban Sandwich month earlier this year. 

About our 1st time putting together this editor’s selection – VE Best of the Year 2021, criteria was certainly not just limited to $sales but to quantities of items sold & popularity. Some categories were filtered by cuisine & new of the year has been carefully selected by our team.

For Cafe Americano this item sales in 2021 are about $3 millions placing it at the top of the whole group.

This was a tough selection because in Oh Mexico, the Bistec con Queso is so good & at La Cerveceria those Carnitas are to die for.

But there is something magical that happens when a perfectly garlic & herbs marinated chicken breast is  combined with chihuahua cheese, crispy bacon, chipotle mayo, spices and we have a winner for both our Mexicans in the family.
